Canning

A natural compliment to my love of gardening is preserving some of the harvest for later use. It's always fun to see how much is put up every year so I kept records just to document it all. The right hand does not work and the left hand now has tremors. Robin cans and will get all canning items. After over 40 years of canning, which I loved, it is time to hand everything over to Robin.

Little canning was done this year. I still can can using one hand though with some challenges involved. I still love to can. Maybe in 2013 I can do more.

Another year of canning and I still love to can. This year I canned 102 jars of various items. Here is a list of items I canned:

  • Wine Jelly: Concord Grape, Elderberry, Cherry, Zinfandel and Blackberry.
  • Chutneys: Peach, Apple and My Mom's.
  • Jelly, Jam or Preserves: Lemon Mint, Apple, Pineapple/Kiwi, Peach and Peach Cobbler.
  • Relishes: Beet, Carrot, Corn & Pepper and Cranberry.
  • Pickles: Maraschino Watermelon Rind and Okra.
  • Vegetables: Tomatoes.

For the year of 2009 I canned 251 jars of various items. I continue to love to can, trying new items as well doing many of the same recipes.

Blackberry Wine & Sangria Wine Jellies, Pineapple Kiwi, & Amaretto Peach Jams, Apple Sauce, & Apple Nutmeg Conserve, Spiced Peach Chutney, My Mom's Chutney, & Pineapple Chutney, Medium, Hot & Peach Salsas, Lime Jelly, & Honey Lemon Jelly, Spiced Pineapple & Peach Jams, Rose Wine & Zinvendal Wine Jellies, Champagne Wine, & Elderberry Wine Jellies, Creamy Peach Wine Jelly, Pickle Relish, Beet Relish, & Garden Salad, Squash Pickles, & Bread and Butter Pickles, Green Beans, & Stewed Tomatoes, Watermelon Pineapple Preserves, Pineapple, & Lemon Pineapple Jams, Sweet and Hot Corn Relish, Cranberry Relish, Watermelon Rind Relish, Concord Grape Wine Jelly.

This has been a wonderful year for canning and I do love to can. I have been using Xylitol for some of the relishes and jam and they turn out wonderful. The sweetness is the same, no sugar, and I can share with my diabetic friends without a problem.

I did 230 jars of various things. These included:

  • Garden Relish, Plums, Summer Squash Pickles,

  • Pickle Relish, Pear Relish, Corn Relish, Corn & Pepper Relish, Cranberry Relish,
  • Pineapple Jam, Pineapple & Pear Jam and Lime Jam.

A good year for canning!

I canned 141 jars of food. This consisted of:

  • Apple Preserves, Lime Jelly, Pineapple Jam,
  • Okra Pickles, Stewed Tomatoes, Citrus Jelly,
  • Tomato Juice, Watermelon Jelly, Okra & Tomatoes,
  • Apple Chutney and Hot Apple Chutney.

  • Blackberry Syrup, Blueberry Syrup and Blueberry Light Syrup.
